Based off the recipe from bythecommomcook. Man oh man, was this tasty! I may not be able to see my family this holiday but this coffee cake does help... and of course Mowgli helps too! Who has clearly been having quite a great weekend (as you can see). But less dog-fawning and more recipe sharing.
I decided this morning that I would indulge and make something warm, delicious, and a little more time-consuming than usual for me. It's really not all that complicated, but it does take some prep work (e.g. peeling and slicing apples, making crumb topping separate from other two layers...) but SO worth it people! Plus I've made a *couple* adjustments to add at least a little bit of nutritional value. Here's what you'll need: Cake & Apple Layers:
Topping:
Preheat oven to 350ºf and grease an 8x8 square baking pan (you could probably use a similar, larger size too like a 9x9 or a circle pan). Cake Mash the ripe banana and combine with butter, milk, vanilla, and almond extracts. Then add the brown sugar, flour, baking powder, and cinnamon and combine well. Topping Combine all ingredients in a small bowl— mixing with your hands works best! {Couple topping notes:} I decided to grind the oats instead of leaving all of them whole, like I usually do for streusel toppings, just because I wanted a little more of typical crumb coffee cake topping. So I had about 1/2 cup ground oats plus 1/4 cup unground because my original mix had a little too much butter/oil. Pour batter into prepared baking dish, layer with thinly sliced apples, and evenly cover with topping. Then bake for 40-50 minutes, cool for 5-10 minutes then try to keep from devouring it! Enjoy!
