Night classes are rough. Not just because they're three hours long— but also because mine runs right after seminar {from 4-5} from 5:30-8:30pm and there is just no. good. time. for. dinner. For me or Mowgli! Given, he doesn't complain as much as I do, but I digress. I used the last of my milk this morning and this is an absolute essential in my home. I would say I don't know how this happened, but honestly, Caleb has just been coming over more... And when Caleb's here, my milk is not. Seriously, the man would suck a cow dry in a day. Again, I digress! So I was out of milk and simply planning on picking some up after class so I could make delicious mac and cheese tonight. Yum! However, my yum was (temporarily) suppressed when I realized... I forgot milk. Lib, you bitch! Ugh... It had just started raining and I really didn't want to bike to the store— I wanted dinner! Ok, what do I have on hand for liquids? Chocolate soy milk? Pass. Orange juice? More suitable for stir fry. Beer? Wine? Alright, I can work with those. So here's what I did: Ladies and gentlemen, I present to you "I'm out of milk, oh no, what now...? Beer Mac" Step 1. Freak out that you don't have milk.
Step 2. Sign, curse yourself out (just a little!) and start looking at this as a creative culinary opportunity. Step 3. Cook pasta. Step 4. Combine white wine and/or beer, cheese, mustard, and flour in small sauce pan until combined. Keep stirring to get everything all mixed together and to make sure it doesn't burn to the bottom of the pan! Step 5. Once the pasta is cooked, drain, and pour the cheese sauce over the top with chopped spinach (or veggie of choice). Step 6 (optional, but recommended). Sprinkle a little more cheese on top and broil until browned. Step 7. Enjoy with the rest of that beer or a glass of wine! Note: I am really sorry but I was starving tonight and didn't pay attention to amounts really :/ Use your best judgement and taste as you go. This is a very flexible recipe! Ingredients:
Directions Cook pasta according to package directions. Meanwhile, combine wine and/or beer, mustard, flour, and cheese(s) in a small sauce pan until combined. When the pasta is finished cooking, add the sauce and spinach. Add a sprinkle more cheese and broil if desired.
